Traditionally made in the northwestern area of Venezuela known as Perija, this unique creation is Queso Palmita’s signature cheese. Fresh with a natural rind and made from grade A cow’s pasteurized milk, a well-guarded combination of cultures and rennets and an old- fashioned ripening process, this mild and slightly bitter cheese is a pleasure for the senses. It is characterized by its particularly spongy and chewy texture with many irregular holes in its paste. The palmita cheese has a wonderfully complex aroma and flavor. As a table cheese, it can be served with a variety of dishes such as sweet plantains, arepas, bread and can be used in the preparation of many sandwiches and salads. Pair it with any white or rose wine.
